I found this recipe here and it is extremely yummy. It's eaten very quickly in my house when I make it. Mostly by me, but still.
- A big bag of thawed hashbrowns (32 ounces to be specific)
- 1/2 cup melted butter
- 1 can of cream of chicken soup (or cream of cheddar. It's cheese soup in a can)
- 1 pint sour cream
- 1/2 cup onion finely chopped (or half an onion...ish. I like to put the other half in a ziplock bag to cut up later)
- 2 cups shredded cheese divided (this one's mostly a feel in your heart one. how much cheese do you want in your dish?
- 1/4 teaspoon cracked pepper (another feel in your heart)
Preheat oven to 350.
Grease a casserole dish.
In a large bowl, combine everything except for 1/2 cup of cheese.
Spread the mixture into the dish and top with the rest of the cheese.
Bake for 45-55 minutes or until hot and bubbly.
